To start, how about a
Roast Chicken with Spring Vegetables
? Using only one pan, let the chicken roast for 15 minutes while chopping up the potatoes, radishes and scallions. After adding the vegetables and returning the pan to the oven for about 20 minutes, dinner is ready to serve.
For all pasta lovers, this
Spring Vegetable Fettuccine Alfredo
is sure to take your cake. Now pasta alfredo is even more of a classic delicacy with the addition of Spring vegetables, lemon zest, and chives.
Seafood and salad lovers alike are bound to jump for joy at this
Grilled Shrimp and Noodle Salad
. For preparation, simply grill sweet and spicy shrimp mixed with asparagus, and mushrooms. Once you add rice noodles and fresh cilantro, it’ll be ready. As an alternative, cook the marinated shrimp and vegetables on a grill pan if you prefer.
Now, to move on to a little bit of barbecue with this dish of
Chili Rubbed Pork Chops with a side of Mexican Rice.
For a bit of extra flavor to add to the meat, simply use New Mexico chili powder, cumin, cloves, and oregano along with a few grilled onions. After that, fry the pork chops for about 8 minutes before serving with a side of whatever Mexican Rice you prefer.
Potato Egg Salad
, you have a new way to spice up an already classic picnic salad item. Use a few fingerling potatoes and eggs along with green peas, even fresh mint. Just boil one pound of halved new potatoes for 10 minutes before adding 4 eggs to the water, and letting them sit for 10 minutes. After adding 1 cup of frozen peas and covering them for a minute, drain, peel, and quarter the eggs just like the potatoes. Toss the mixture with 3 tablespoons of olive oil, 2 teaspoons of lemon juice, parsley, and mint. Once you sprinkle them with parmesan, salt, and pepper, you’ll have a light dinner to enjoy for the evening.
We all love spaghetti and meatballs, but how about something a little different like a
Pasta and Turkey Meatball dish
? If you want to cut down prep time on making meatballs, then use sweet Italian turkey meatballs. After bringing a pot of salted water to a boil, add the pasta as labeled and then broccoli within the last two minutes of cooking. After draining the pasta and broccoli, reserve a cup of cooking water. Once that’s taken care of, roll the sausage meat into 20 small meatballs before heating a tablespoon of olive oil in a large skillet over a medium sized flame. Add and cook the meatballs until they’re a golden brown color for 5 to 6 minutes. After that, just drain them in paper towels and pour put whatever remains on the skillet. Once you add 3 tablespoons of olive oil, garlic, red pepper flakes, and ½ teaspoon of salt, you’re ready to cook over a medium heat. Stir the mixture for 1 minute. With the pasta, broccoli, and meatballs mixed in, whisk an egg in the cooking water, and put to the side in a small bowl before adding it to the mixture. Once the sauce is thick enough, add a bit of salt and pepper, divide the pasta according to how many bowls you have, sprinkle it with cheese, drizzle with olive oil, and get ready to serve.
